Potatoes, Onions & Eggs – Saturday Breakfast

It’s the weekend. Wait a minute, since Grenville and I are both retired from the paid working world – every day  is like a weekend. Whoops, sorry if you are still in that world. In a sense we still work, only now it’s called volunteering, which is a different form of work.

Saturday and Sunday breakfasts are special cause that’s when we make something quicker than oatmeal, toast or smoothies. Grenville’s specialties are pancakes or French toast, made using leftover homemade bread. Today was my turn and so here’s an easy breakfast using potatoes, onions, eggs and cheese.

Slice a couple of potatoes very thin. Cut and slice an onion or use the whole onion if you really like fried onions. Season the potatoes with some salt and pepper or your choice of spice(s).

We had some red potatoes so that’s what was used today. Put some olive oil in a pan and heat until hot. potatoes-onions (3)Put in the potatoes and onions and start cooking.

potatoes-onions (7)Here they are cooking together. Keep flipping the potatoes until they are all browned and crusty. When they start sticking. they are getting – we like them really browned.

While the potatoes and onions are cooking, potatoes-onions (4)I scrambled 4 eggs and when the potatoes and onions were nicely browned, poured the eggs on top and let them cook.

potatoes-onions (9)The final touch, which I almost forgot today, is to add some shredded cheese on top – today it was cheddar, mozzarella works well too.potatoes-onions (10)

Once the eggs have set and the cheese is melted, it’s ready to serve. Today was an NL (no lunch) day so I cut this in half and served with a fruit cup of bananas, kiwi, pecans, and dried cranberries.

If you’re ever in our neighborhood, let us know and we’ll serve this for breakfast – weekend or not. It’s best enjoyed in “jammies” so don’t forgot to bring yours – and slippers too.

That's looks good. I wouldn't think of puring the egg over.

That looks soo good! But I can´t eat fried food in the morning, it´s a bit too much for me.

But my mother loves it so when I´m there visiting I always have to ask for something easier :-) But I would love it for lunch though :-)

This is a note to the people who watch this cooking Blog. B & I are fortunate enough to eat these wonderful recipes at this wonderful home. I can personally gaurantee you that if I had been there for breakfast, I would eat more than I should. It is hard to resist this down home food with down home hospitality, friendship and down home eats. Both are wonderful cooks and B and I are fortunate enough to be able to enjoy all at least every 3 weeks. The food is yummy, yummy, yummy for your tummy, tummy, tummy.

Oh my.. Problem: It's almost noon - been too busy to eat, just had one coffee around nine AM - but after reading this - I'M STARVING. (Very big grin).. ATB! (Off to get some - ah - brunch)?

Yummy - that's right up my alley. We almost never cook breakfast at home unless we have company. I took a screen shot of this recipe and plan to try it out someday soon!

have to try it one day !
On Sundays we have a good old fashioned fry up about mid morning make it a brunch thing ! Thats our thing to do once a week with the foods your not suposed to eat bahh to that our parents and before them never ate all this health food crap and they did well lol anywho thats our once a week treat fryed fatties ! Hi everyone, this really is good anytime, not just for breakfast, Grenville and I have been known to have it for dinner too!
AC and Ginny, it can be enjoyed without the egg (or cheese) but since this was breakfast...

Pat, we don't always have potatoes on hand either, but bought a 5 lb bag for something else and so now we're using them up...slowly.

Looks pretty good to me! This is the kind of breakfast I can remember from my childhood!

How can you go wrong with 'taters and onions for a meal? The eggs for me are the perfect topper!

All I need now is a dash of hot sauce!

That's my favorite type of meal ... especially for a light supper on a cold day.

Hi HermitJim, this IS the kind of breakfast from my childhood as well and that's why it's still a favorite meal - anytime without hot sauce for me, but then you are in Texas!

I tend to eat well in the morning and lighter for lunch.I like to make this when camping, it saves on dishes.

Steve, we certainly ate well with this meal and skipped right over lunch as a result, but other times we cooked a variation for dinner.

This sounds like a wonderful breakfast. We usually make omelets on Saturday, but I would very much enjoy this as much.
