Good Eats at Home

The post title partly refers to the title of a popular cooking show that we always enjoyed on the Food Network. And, describes what's been happening at out home during self-isolation. We've been cooking at home a lot more vs. take-outs from local eateries.

Good Eats is/was (not sure if it has returned) was created and hosted by Alton Brown. He explained how to create a meal, and included wacky teaching methods to explain how ingredients interacted when put together.  (Update: Good Eats Reloaded is available on the Cooking Channel. I watched a couple of new episodes online. It’s still a fun show.)

NH has thankfully been less corona virus impacted than some neighboring states. We've been in self-isolation mode since mid-March (how time does go by) and cooking more with favorite recipes. Home cooking isn't something new for us as we enjoy meal prep and working in the kitchen, just not at the same time, due to space constraints in our galley kitchen. And, clean-up is the least favorite part of the process.

None of our dinner recipes have been complicated ones. We like to cook but the easier and quicker the better for us. That said, one-pan/pot meals are huge favorites. (Did I mention we both dislike cleanup?)


Shown above are a few tried and true favorites — sheet pan roasted chicken and vegetables, stuffed peppers, and pasta e fagiola (often called pasta fasul or fazool). The last one is a traditional Italian pasta and beans dish commonly made using cannelloni beans and pasta, traditionally ditalini. The soup base includes olive oil, garlic, onion, celery, carrots with tomatoes. It's best served with chunky fresh-baked bread. Yes, we've been making bread too, hasn't everyone?  

The stuffed pepper filling was leftover meatloaf with added rice and tomato. Leftover meatloaf is good, but a different meal was better.

Yes, pizza has been on the menu quite a few times in many different varieties and toppings: sausage, pepperoni, extra cheese. The Lodge cast iron pizza pan purchased on our cross country trip 2 years ago has been getting a real workout. We've used store bought pizza dough in the past, but recently have started preparing our own dough, after all we do have the time and, lately, the flour and yeast too.

No recipes have been included in this post for several reasons — there's so many available online, everyone has a favorite recipe/method and, more importantly, space because who wants to scroll through several long recipes in a blog post? (No, I didn't think so either.)

Before and during meal prep photos also have been excluded since it's really difficult (and quite messy) to snap a pic when working solo in the kitchen (as mentioned earlier we work alone).
Now, at the risk of making you hungry, above are a few more recent meals and none were difficult. Clockwise from the top: sausage with peppers, onions and potatoes was another easy oven-cooked, one pan meal. Chicken pot pie was easily done using store-bought rotisserie chicken, a frozen pie crust and either fresh or frozen peas and carrots with spices and a cream soup base. The homemade sauce as done by sautéing garlic and onion, adding spices, and two cans of crushed tomatoes. The resulting sauce was used for pasta and pizza. Leftover meatloaf/stuffed pepper filling was re-purposed in a dinner omelet. 

Good news here is that NH restaurants re-opened for outdoor dining only this week with socially distanced tables of from 2 to 6 people, depending on the restaurant and outdoor space. Servers are masked; customers are not unless entering the restaurant to use the facilities. We're looking forward to outside dining as warmer weather is finally here and looks like it's staying around.

Aside from dinner, I've also been doing some baking, recently termed stress-baking and thankfully some neighbors have been willing recipients of my banana bread and soda bread. I've also made fettuccine using a pasta maker my late mother gifted to me over 30 years ago and which I recently started using — it was long overdue, details in a future post. Thankfully, flour has become more available in several local supermarkets.

Miriam and I both enjoy cooking, and she likes to bake too. We have a fairly decent sized kitchen with adequate counter space, but I can imagine that a smaller area would change our habits in a hurry. Cleanup is definitely not anyone's part of the process, I suspect, but I do it most of the time in our house, and it doesn't faze me that much. Often I clean up as I go. If for example the recipe calls for simmering for ten minutes before adding other ingredients, I use that time to start the cleanup. I have to say that the results are generally worth the effort.

Our retirement community includes a daily meal plan (delivered now, no dining rooms open yet) so only breakfast and lunch prep going on here. You reminded me that when we move I'd be cooking more (Dan doesn't cook) and I'm glad I have still the pizza stone because I do like to make pizza. Hmm the recipe for the pizza dough is in a cook book I gave to daughter Emily. Hope she kept it.

Completely so since the second week of March. Not happy about it either. I made myself a lovely cheese pizza 🍕 yesterday. Guess I can cook and clean since I must. Your roasted veggies look amazing!

OMG...the pasta e fagiola, pot of homemade sauce, and the photos of the various pizza's you made literally made my mouth water. I can actually smell all those things!

Being Italian, I'm a big-time foodie. All I've been doing for the past two months is looking at recipes online and making all sorts of dishes I've never eaten before.

EAT...EAT...EAT! It's been like a full-time job. Thank god I've been also doing a lot of walking and exercising each day because if not, I fear becoming a VERY LARGE meatloaf. LOL!

Happy to hear that your restaurants are re-opening for outdoor dining. That's awesome!

It all looks very tasty. I don't cook at all, in fact I don't really eat meals, I just snack on crap. And that's why I've put on weight during this lockdown. Sigh.

We have a galley kitchen and our space is limited. Whatever the case, neither of us are much into cooking anymore anyway.

all of your food photos are fantastic and have me drooling with envy!

We are in complete agreement about disliking clean-up. Now that I live entirely alone, I like to keep meals simple and relatively easy - - often in one pan or one skillet.
I always make chicken in the oven like you do (with potatoes and vegetables).

Your pizzas and chicken pot pies look great. Sometimes, when I want to make a quick variation of "pizza", I'll just use Italian bread - and top it with pasta sauce, cheese, onions, and ham or sausage, and pop it in the oven until the cheese melts.

My Mom used to make really good stuffed peppers - and she used rice like you do (some recipes omit the rice).

I enjoyed this delicious post.

Everything looks so good. We have been cooking more at home during this pandemic, but we're getting tired of our own cooking and looking forward to being able to go out again.

Well, you've certainly been using this time in a great way. I used to cook, but not so much anymore. It's just me and Pogo, so easier is better for me now. I must say though, those meals do look tempting. Enjoy your day, hugs, Edna B.

A friend of mine adores Alton Brown and probably watched every show and reruns! All the food here looks delicious. Today is our daughter's birthday and if she's in the mood for it, I have the fixins for chicken lettuce wraps that we can drop off curbside since they live near by.
We have ordered out during the shut down, some pickups, some deliveries, but I am also enjoying cooking and baking at home, too. We're eating well, probably a little too much.

I used to love cooking and baking. Now it seems like more trouble than it's worth. If it weren't for me needing to see to it that my son is nourished I would probably live on cereal and TV dinners.

The truth is I'm trying to re-educate myself - trying to reduce work on all aspects. Cooking, baking, cleaning - that's a lot of work.
I have a more or less fixed menu that is adapted to my weight watching needs; this menu requires minimum work once you've got the ingredients from the grocery store.

This looks so very delicious! Everything! Yes, we're all cooking a lot during this, aren't we? I never planned all that much ahead -- it was so easy to run to the store. But now I've got food for at least another week. It may not always be what I wanted, but we won't starve before grocery order day!

Hi Beatrice... Not too big on Alton Brown's shows as he's just a bit too goofy for us. But, when we lived in Chicago we ate in his restaurants a couple of times and the food was excellent. Love that sheet pan roasted chicken with potatoes and vegetables! Its right up my alley in its simplicity. No bell peppers for me though although I eat jalapenos pretty regularly. We both love a good chicken pot pie. As for home cooking, its generally very basic and sometimes we just eat what's in the cupboard or fridge just because we don't want to cook. Much of it is commented on in my blog. Baking is limited to corn bread, biscuits or cookies once or twice a week. Restaurants will be open at full capacity Friday, 5/22/20 in most Tennessee counties. However, we won't be dining in for at least 3 weeks yet, just to be safe. Stay Safe and Take Care, Big Daddy Dave

Every single meal. I'm now starting to think I can do take-out -- I've been reluctant before this. I'm going with pizza I didn't make as my "treat" for Memorial Day weekend. I'm waiting until New York City gets out of door restaurants. I think I'd feel comfortable doing that and what a treat that would be. I haven't made stuffed pepper, but I think I need to add that to my rotation.

It all looks delicious. I enjoy cooking and baking and since I do the cooking Gerard does the clean up. The system works well for us. On the rare occasion he cooks I do the clean up.

we used to work in kitchen together for years but since my husband recovered from Hepatitis he i don't let him anymore

i enjoy winding up things either :)
