Finger Pickin’ Good

YUP, that describes last night’s dinner . . . so good that there’s only a few leftovers. Glad friends Marty & Bob were here to help out.finger pickin good (2)Thanks to fellow blogger, Denise who posted this recipe on An English Girl Rambles last week and reminded me to get my crockpot out of the pantry and USE it in this beastly HOT weather. Giving credit to the source, this recipe is from Kitchen Meets Girl where there’s more simply great and (mostly) easy recipes.

FYI, today is Denise’s birthday if y’all want to drop in and wish her a wonderful day.

Crockpot Pulled Pork (e-a-s-y)

  • 1 boneless pork butt or shoulder, 4 to 6 lbs.
  • 1 large onion, sliced thin
  • 2 TBSP brown sugar
  • 1 TBSP smoked paprika
  • 2 tsp Kosher salt
  • 1/2 tsp pepper
  • 3/4 C cider vinegar
  • 4 tsp Worcestershire sauce (reduced sodium)
  • 1-1/2 tsp crushed pepper flakes
  • 1-1/2 tsp sugar
  • 1/2 tsp dry mustard
  • 1/2 tsp garlic salt OR garlic powder
  • 1/4 tsp cayenne pepper, if desired
  1. Rinse roast under cold water and pat dry with a paper towels.
  2. Place sliced onions in bottom of crock pot.
  3. Combine brown sugar, paprika, salt, pepper; mix and rub over roast. Place roast in crock pot on top of onions.
  4. Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, dry mustard, garlic salt and cayenne pepper (if using). Whisk to combine. Drizzle a third of mixture over the roast.  Cover and refrigerate remaining vinegar mixture.
  5. Cook on low for 10 to 12 hour — mine was done in less than 10 hours so I kept it on warm for an hour until friends arrived).
  6. Drizzle a third of reserved vinegar mixture over roast during the last half hour of cooking. Remove meat and discard onion (or use, your preference).

Shred meat using a couple of forks, removing all visible skin and fat. Serve with remaining vinegar mixture or barbecue sauce. Sides dishes here were Marty’s homemade cole slaw, Grenville’s freshly picked tomatoes drizzled with olive oil, salt and fresh pepper, and cucumber salad.

Just watch your friend (and spouse’s) fingers cause they won’t be able to resist pickin’ at this meal.

Coincidental that you posted this recipe. My daughter just fixed a pork roast in the crock pot using some diet soda. I plan to try it this week. Yours sounds delicious, by the way.

The crock pot makes all kinds of sense in hot weather because you don't have to spend much time in the kitchen. Excellent!

First, thank you so much for stopping by. I know I have not been around of late, but life has been hectic.
What a neat post today! I loved it and dinner sounds just wonderful. What a great recipe...problem is that I have somehow given up a lot cooking to the extent I used to and have gone the easy route. :) Still...after you gather up all the incredience, this recipe is really very simple... I like that.
