Thai Chicken Crockpot Dinner

Tonight's dinner was another chicken crockpot recipe that was not only SO easy to set up, but included thai chicken (3)a couple of our favorite ingredients – salsa and  peanut butter.

This was a first-time recipe from a Rival Crockpot recipe book. There are many other variations available online. Chicken thighs were used, but other pieces of bone-in chicken can be substituted.

Thai Crockpot Chicken

  • 8 chicken thighs (skinless)
  • 1 C salsa
  • 1/2 C peanut butter
  • 2 TBSP lime juice
  • 1 TBSP soy sauce (low-sodium)
  • 1 tsp minced ginger
  • 2 TBSP cilantro
  • 1/2 C chopped scallions
  • Optional:  1/2 C chopped peanuts when serving
  1. Put chicken in crockpot.
  2. Mix other ingredients together – salsa, peanut butter, lime juice, soy sauce and seasonings – and pour over chicken.
  3. Add scallions on top and cover.
  4. Cook on LOW 8-9 hours or HIGH 3-4 hours. (If you want chicken that’s so tender it falls off the bone after a longer cooking time, then go for the LOW setting.) 
  5. Serve over rice; sprinkle with peanuts (if desired) .

Serve with a side of salad or green vegetable and ENJOY !

This sounds wonderful! Although I am not sure about the peanut butter...........but will just have to try it!

I'm with Eggs In My Pocket sounds good but not sure about it with the peanut butter but stranger things have been mixed in recipes and taste great lol Have a good day !

That looks really good Beatrice. I need to learn some new ways to make chicken. I get tired of making it the same way all the time.

I use the p-butter in mexican food, a common ingredient in a mole.i almost expected coconut milk to be in this.

Sounds like something I'd like....my husband not so much. lol. He doesn't care for chicken.

Interesting combination of ingredients. For a small town Fairbanks has lots of different Thai restaurants but since I've been only occasionally I stick with just a few choices.

Hi Everyone, thanks for the comments. We also thought this was an unusual combination of ingredients, especially the peanut butter & salsa but they worked well together. We're going to give this another try using store-bought salsa next time. This version used our last bottle of Grenville's home-made.

Steve, an on-line recipe version used coconut milk on the accompanying rice. Mona, not surprising to learn your husband doesn't favor chicken as you live in cattle land (Montana). Elaine, we also stick to some favorite choices at the handful of local places we dine at. A Thai restaurant (only one) is supposed to be opening soon and is already on Grenville's "to try" list.

since i love all things peanut butter, i am sure this is delish, would never have thought of putting that with chicken. looks good from here.
