New Arrival !

Grenville & Beatrice (that’s us) are ecstatic to announce that we have a new granddaughter – and we’re happy. Getting a new one is always good because why get an old one?

As readers of this blog, you may (or may not) know that we have a 4-1/2 year old grandson. This new 6 lb, 18-inch arrival is his baby sister. When grandson#1 was arriving, we travelled cross-country to CA. Thankfully his parents relocated to New England, only 10 hours away.

That means – a road trip to visit the grandkids and their parents starts this weekend. We’re heading to RI by way of a stop in N, then returning home by way of a stop in PA. The stops are to visit family in both states. While we’re in RI, we’re also visiting with family in CT.

Peaches and Apples

Last week Grenville posted photos showing the Frog & PenguINN veggie gardens, wildflowers and the orchard. This overview shows the peach and apple trees.orchard0716
As Grenville said earlier, the peach tree is LOADED this year. We’re planning to freeze some peaches for winter use. Over the weekend, Grenville made a delicious pie with peaches frozen from last year’s harvest. Sorry, we finished the last couple of pieces tonight – they were wonderful served with peach ice cream !

And, if any one reading this post is planning to visit the VA eastern shore in late summer, let us know. We’ll save you a piece of pie and some ice cream too. Sorry, no take-outs so you’ll have to come to the Frog & PenguINN  to enjoy this treat.

Bean, Beet and Cucumber Salads

Recently, I’ve been trying some new (to us) salad recipes since, thanks to Grenville’s green thumbs, there’s a lot of fresh veggies from the  Frog & PenguINN garden. These recipes are different from some usual ones in that none use mayo or sour cream; instead all contain white vinegar, oil, and honey.

Yes, we do try all recipes posted in our blog. Some are slightly altered because of personal preferences or ingredient availability – if it’s not in the pantry, then it’s time to substitute.

joy of gardening cookbk (1)These were served at the F&P when friends came for dinner a couple of weeks ago. All are from a recent addition to our cookbook collection,
Joy of Cooking Cookbook by Janet Ballantyne There’s always room for one more book, especially one that’s all about vegetables and s
imilar to our favorite, Victory Garden Cookbook. And, it was a bargain at the local library’s sale table of withdrawn books.

If you have an abundance of beans, beets, or cucumbers, or just want to try a new recipe, then give one or more of these a try. They’re not only easy, but no cooking is required – a very good thing on HOT summer days here on the VA eastern shore.

Green Bean, Celery, and Kidney Bean Salad

  • 4 C diagonally sliced beans
  • 1/2 C sliced scallions
  • 1 C diagonally sliced celery
  • 1 C kidney beans
  • 3 TBSP soy sauce
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 2 tsp honey
  • 1 tsp fresh ginger root
  • 1/3 C wine vinegar
  • 1/2 C vegetable oil

Note: substituted 1/2 tsp dried ginger for ginger root

  1. Steam the beans until tender crisp, about 3 minutes, put into bean salad0702 (1)cold water and drain well after cooling.
  2. In a large bowl, toss beans with scallions, celery and mushrooms.
  3. Whisk together the soy sauce, sesame oil, garlic, honey, ginger, vinegar, and vegetable oil.
  4. Pour over salad, toss and serve.

Prep time: 30 minutes / 6 servings

Beets and Orange Salad

This is a very colorful dish with red beets and orange sections.

Cook beets  before peeling to retain color and flavor. Wash the beets well, trim off the greens and tap root, cover with water and boil about 20 minutes.beet salad0702

Cool and slice cooked beets and combine with orange sections and minced scallions (optional). Pour Honey Curry Dressing on top.

Honey Curry Dressing

  • 2/3 C vegetable oil
  • 3 TBSP lemon juice
  • 2 TBSP white vinegar
  • 1/4 C honey
  • 1 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Whisk ingredients together and pour over beets and oranges.

Scandinavian Cucumber Salad

This recipe calls for a lot of cucumbers, and while we like them, cuke salad0702we try to avoid eating the same salad all week. I only used half this amount of cukes and  reduced the other ingredients accordingly. But if you’re feeding a large group OR really like cukes, then use as posted.

  • 8 C thinly sliced cucumbers
  • 1 tsp salt
  • 1/2 C white vinegar
  • 1 TBSP sugar
  • 2 tsp honey
  • 1/4 C vegetable oil
  • 1/4 C minced fresh dill, fennel, parsley or chives
  • 1/2 C sliced red onion or scallions
  1. Place the cucumbers in a colander and sprinkle with the salt. Weight the cucumbers with a heavy plate, drain for 1 hour, then transfer to a large bowl.
  2. Mix vinegar, sugar, honey, oil. Pour over cucumbers. Toss in herbs and onion or scallions. Serve chilled

Prep time: 20 minutes + 1 hour for draining
Chill: at least 1 hour
Yield: 6-8 servings

BUT That’s Not ALL!!!!!

One of our favorite places to go in the afternoon is the Sugar Shack… a place we are avoiding this year since we both would like to lose a few tons :-) . BUT the final finale to the Birthday Fiasco was today for the traditional celebration with a Banana Split (for two of course).

banana split There really was a cherry on top but i got carried away and ate it before the picture. We were very reserved and had a scoop of Moose tracks, caramel caribou, and mocha madness. AND we kept it to just chocolate syrup (the fudge wasn’t hot enough).

all gone THE END…. Really!!!!

Birthday Finale

What a day. Dinner at the Inn & Garden was great. I am a sucker for Rack of Lamb. And sure enough they had it.

IMG_0957

While we were there we met a family from NJ who were traveling to the Outer Banks. They had decided that the ten hour drive should be broken up, and since this was their first trip there they would treat themselves to someplace special instead of just a motel. IMG_0958Did we mention the the Inn & Garden is also a B&B??? Desert  was accompanied by a serenade by the chef and waitress. The evening culminated with a movie at home, ‘Drowning Mona’ with Danny DeVito, Bette Middler, and Jamie Lee Curtis. We wondered why we had never heard of this movie or seen it advertised. Within 15 minutes we knew why. My advice; watch an old musical or a sci-fi flick.

Again, THANK YOU ALL for your birthday wishes. For those of you still awaiting the big SS Date i can say it was painless.

What’s a Birthday?????

Who’s birthday???? Oh yea,,, its mine!!!!! So i guess i will have to admit that as of today i am eligible for Social Security. Of course if the country goes into default in August i guess i can kiss that good-by. Does anyone else see shades of 1929??????

There have been so many Birthday wishes that answering in the comments just doesn’t seem right so here goes:

THANKS TO EVERYONE!!!!!!

YES Lois, MamaBug, Denise, and Ginnie, it has been a really nice day here. Never hit 80F today AC,  which makes two days in a row.No cake yet Grace, but a nice double scoop of ice cream on the porch earlier. I did get a little relaxing in Cicero, a quick ride in the hammock.

Now someone asked what i did today. Well i’m sure someone will. Lets see, Opened the greenhouse, checked the crops, picked some yellow squash and cucumbers and tomatoes (they are just starting.) Then put the new throttle cable on our small row tiller, rebuilt the platform for one of our trailers, dropped the hay wagon off to a neighbor so he could fill it with grass clippings (Green manure for the fall), cut the grass front and back, ate ice cream on the front porch with the Princess, emptied the hay wagon and went for a second load, went for a hammock ride, and now hangin’ out with you’se guys.

Like Beatrice said, next is dinner at the Inn & Garden in Onancock (one of the suburbs of the Greater Onley Metro Area.) Here are some update pics of the crops.

crops 1 Those are tomatoes in the center, along with squash, zuc’s, cuc’s, corn, beans, and carrots (I hope). Sunday will be the Corn & Rib Festival here. Let us know if you can stop in.

peachesIt’s a little hard to see but the center pic is our peach tree, which is loaded this year. SOOOO the peaches in the freezer are going to turn into a Peach Pie for Sunday. The other pics are of the Butterfly Meadow. We are getting Monarchs, Swallowtails, Fritillaries,  and lots of bumble bees.

Yellow Squash Bread

Lately, there’s been less time for blog posting.

squash0707

WHY?
2 words - squash +  zucchini
Freezing excess of either vegetable didn’t work well. Tried that last year with soggy results, mostly used in winter soups. So, this year I’ve been baking lots of breads and freezing them. Several will be coming on our upcoming RI road trip.
choc zucchini bread0707 (2)Last year’s harvest  found its way into several breads: the usual zucchini bread, chocolate chip zucchini bread, (shown here and hands down Frog & PenguINN favorite) and cheddar zucchini bread (least favorite with no repeats this year).

This year it was time to try a new recipe using yellow squash. Unlike zucchini which needs to be salted and drained first, the yellow squash seems to retain less water, but I did drain it too after shredding.

Yellow Summer Squash Bread
  • 1 1/2 C flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 teaspoon salt
  • 2 tsp ground cinnamon
  • 2 eggs
  • 3/4 C sugar
  • 1/2 C vegetable oil
  • 2 tsp vanilla
  • 1 1/2 C shredded yellow squash
Preheat oven to 350°
  1. Combine flour, baking powder, baking soda, salt, cinnamon in bowl.
  2. Combine eggs, sugar, oil, vanilla in a separate bowl. Mix well.
  3. Stir in the shredded yellow summer squash.
  4. Add the dry ingredients to the squash mixture. Stir until moistened.
  5. Pour or spoon into a greased and floured 9x5-inch loaf pan. Bake for 50 minutes or until a knife inserted in the center comes out clean. Cool for about 10 to 15 minutes and remove from pan.
Sorry, no prep photos as I was trying to remember to double ingredients for 2 double batches (easily distracted). YES, we have THAT much yellow squash. Grenville planted less this year, but we’ve had LOTS of rain and hot weather recently – perfect elements for zucchini and squash growing.

Today’s yield was 4 loaves.  Each loaf was cut in half and wrapped separately for freezing. It’s really handy to use without defrosting an entire loaf, which we might enjoy TOO much. yellow squash bread 0714 (2)
