Salmon Dinner

Salmon was on the Frog & PenguINN menu last week and here’s an easy dry rub courtesy of Tammy who posted it on Simple Southern Happiness. Check out her blog and click on the Good Eats section for mouth-watering recipes. But don’t look if you’re hungry because Tammy also posts awesome photos that look good enough to eat!

Note that for this dry rub, I estimated the amount of seasonings needed. Also I used smoked paprika and substituted dried nutmeg.

Prepare dry rub of dried garlic, paprika, dash of fresh nutmeg, and pinch of salt. Rub ingredients on salmon, wrap in plastic wrap, and marinate overnight in fridge.

Heat oven to 375 degrees. Drizzle olive oil on salmon and bake until done. Cooking time varies depending on the size and thickness of the fish; ours took about 10 minutes.

Sprinkle with dill and pour pan juices on salmon before serving.

While we often serve salmon with a side of wild rice and vegetable,IMG_9832 this meal was enjoyed with fresh beets from friends (thanks Matt and Grace) and green beans from last year’s harvest (thanks Grenville).

Your meal looks delicious! I am a friend/follower of Tammy (we're both here in GA). My husband would love the beets, especially. (and of course my little dog would love the beans!)

I love salmon. I visited pen-pal friends in Victoria, British Columbia, one summer 37 years ago. They were interested in my handwriting (calligraphy) and I wrote them a lot. They saved ever letter.

Wonderful husband, originally from Quebec, and his bride from London, during the blitz, Esme. They had an ideal place in the outback, up a steep mountain, ridge, hill, and friends were always stopping-in to give them something. Like a Mounted Policeman stopped and gave them a fresh salmon, cleaned, and read to eat. I got to eat a piece of that and have loved that kind of meat ever since. Wow. So you photo brought back lots of memories. And Howard was the only man I ever met who fixed his own bacon for breakfast. They used a wood cook stove and he would have it roaring hot and then take his bacon and put it in a brown, kraft paper, bag and put that in the hot oven. In a few minutes he would open the oven and pull out the bag and the bacon was simply delicious. Not fried. Just perfect bacon and any grease was in the paper bag. Loved it. Still do but can't figure out how to do it in a micro wave without catching the bag on fire. I won't buy a cook stove to make it. So I am out of luck.

Carole, agreed that nutmeg seemed unusual, but it was in Tammy's post and worked well.

Steve, unusual combo, but if it works well with the salmon we may try it one day.

Mona, no fish...ever? but then you are living in a state where meat is probably more popular.

Abe, glad to have evoked such pleasant memories. Man, that bacon must have been so good. It's our favorite choice served with breakfast, but not every day :-(

My niece in Fairbanks, Alaska, and her husband go out every year and fish for salmon...it's a regulated thing and they have a permit. When I visited their freezer was full and we had salmon fixed in different ways almost every night. (even had it for breakfast with scramled eggs. Yum)

Ginnie, we've had salmon for breakfast too; smoked lox is really good with cream cheese on a bagel. How lucky for your niece and husband to get fresh salmon and for you to enjoy it as well.

I am glad you like it!! I do love beets and have not had them in some time. I will have to get some very soon.
Nutmeg is a neglected spice and only use in baking. Try it on steak and chicken too. It seems to have a different flavor even sprinkled on fried chicken too.
