Smile - It’s Cheesecake Time

Everyone smiled broadly when the dessert came out aftercheesecake Christmas dinner. And, who wouldn’t when it was cheesecake.

Don’t tell our guests, that this was a first-time tried recipe. While there’s always a risk in doing that with company or on a special day, this one turned out delicious. It’s definitely be on our “try again” list at the Frog &PenguINN. Baked Cheesecake
  • ¼ C margarine or butter
  • 1 C graham cracker crumbs
  • ½ C sugar
  • 2-8 oz. packages cream cheese, softened
  • 1 (14 oz.) can sweetened condensed milk
  • 3 eggs
  • ¼ tsp salt
  • ¼ C lemon juice
  • 1 (8 oz.) container of sour cream
Preheat oven to 300°.
  1. Melt margarine or butter in saucepan, and then stir in graham cracker crumbs and sugar. Press firmly on bottom of buttered 9-inch spring form pan.
  2. Beat cheese until fluffy in large mixer bowl.
  3. Beat in condensed milk, eggs and salt until smooth. Stir in lemon juice.
  4. Pour into prepared pan.
  5. Bake 50-60 minutes or until cake springs back when lightly touched about 1 inch from center.
  6. Turn oven off and spread sour cream on cheesecake. To reduce cracking, return cheesecake to oven for 1 hour (oven turned off).
Cool, remove side of pan, then refrigerate. Serve with your choice of toppings, cherries are especially delicious and colorful. Refrigerate leftovers – if there are any!

Perhaps I should make this tomorrow! Looks much easier to do than the one we make over here. And Cherry jam is always right :-)

Have a great day now!
Christer.
