Peanut Butter Cookies

Before heading south to GA for the Thanksgiving holiday, I madepeanut butter cookies peanut butter cookies. This very easy recipe makes about 3 dozen cookies (depending on size).

The ingredients list is small and you may already have everything needed in your pantry.

NOTE: You can add chocolate chips or nuts for variations of this recipe.

Peanut Butter Cookies
  • ¾ C creamy peanut butter (any brand)
  • ½ C Crisco® all vegetable shortening
  • 1 ¼ C light brown sugar, firmly packed
  • 3 TBSP milk
  • 1 TBSP vanilla extract
  • 1 large egg
  • 1 ¾ C all-purpose flour
  • ¾ tsp baking soda
  • ¾ tsp salt
Heat oven to 375°
  1. Combine peanut butter, shortening, brown sugar, milk and vanilla in a bowl; beat at medium speed until well blended.
  2. Add egg and beat until blended.
  3. Combine flour, baking soda and salt; add slowly to creamed mixture at low speed.
  4. Drop by rounded tablespoon onto greased baking sheet; flatten slightly with edge of fork.
  5. Bake 7 to 8 minutes or until just set and starting to brown.
  6. Cool 2 minutes on baking sheet. Remove to cooling rack or brown paper to completely cool.
Best enjoyed with a tall glass of cold milk.

I love peanut butter cookies, seldom make them though because Jerry does not like them nor Peanut Butter. Maybe I'll make some of these for the cookie walk benefit for our local library next month. Today I am still so full from yesterday's dinner that no food is enticing.

Oh, yes, peanut butter cookies are a favorite of mine, too. I haven't made them in a long time. Thanks for the reminder. :) I'll have to make them while we are home this time. Yum!

My favorite, there is a texture I look for like my grandmother would make. She sent them in a department store box so sometimes it was all pieces,depending where I was living at the time. I remember eating even the crumbs.Laughed at a church sale when a lady said these are what you came for, pointing to some. I wasn't sure if I knew her or she saw that likes sweets look on my face, but they went home with me.

Peanut butter cookies are always good. I always make several cookie trays for Christmas gifts, and these might be a good addition. I need to get started on baking very soon!

Hi Everyone, glad you enjoyed this peanut butter cookie recipe. It is so easy and more will be baked in the next couple of weeks for holiday eating along with some chocolate chip cookies and another attempt at biscotti. Grenville especially likes baking this last one and we recently got a small cookbook with varied biscotti recipes.
