Cucumbers in Lemon Juice

cukes in lemon (3)OK, so you know about the overflow  of cukes in the Frog & PenguINN vegetable garden this year – thanks to Grenville’s growing enthusiasm for planting. We’ve been eating a lot in tomato-cuke sandwiches, sour cream and cuke salad, tomato and cuke salad or just cukes alone.

Here’s another way to serve cukes. This is not only so easy, but refreshing too, especially on a hot summer day like we’ve been having. Even neighbors who never eat cukes have found themselves taking seconds.

Cucumbers with Lemon Juice-Dill Dressing

Peel 1-2 cukes (depending on size, you may be able to only use 1 large one). Cut in half lengthwise and scoop seeds out with a spoon. But if you have small (or seedless cukes) you may prefer to leave the seeds in. Slice, sprinkle with salt, and place in colander to drain.

(Note: covering with a paper towel and then weighting down with a large can of crushed tomatoes works well.)

When drained, mix with 2-3 tbsp lemon juice, 1 ½-2 tsp of sugar and, if you prefer, chopped red onions or shallots. Toss with chopped dill, parsley or mint and season to taste.

Refrigerate before serving – best enjoyed when well chilled.

You can also cut them lengthwise, scoop out the seeds and run them through that mandolin with julienne attachment and make the little side dish that they serve at sushi places. I think a few drops of rice vinegar, olive oil and lime juice and maybe some toasted sesame seeds works on this. Of course with your abundance you could just use it as mulch.

Old Bike Rider, thanks for the recipe info. next time I'll try using lime juice and adding some olive oil too. And, yes, you are right that we could mulch with our overflow, but then we would have even more cukes NEXT year.

Yes, Christer, this is good and sooo refreshing as well as being a very light side dish in the hot summer weather we've been having here.

Ummm that looks good. We did not plant the garden this year becuse we did not feel sure of how things would go this year with our elderlies. I love cucumbers and make a salad with sour cream, onions, and vinegar, dill and sugar similar to this. Have also done just vinegar and olive oil, cukes and onions....they are so refreshing! I have a recipe for refrigerator pickles that I made one year when we had too many cukes; I still have 2 jars left. I liked them because I did not have to can and boil. I gave away the canner when we left CA. But putting them in the refrigerator was easy. Glad you caught yourself on my blog...

Pat, it was such fun to see a mention of my auction post on your blog and I so much enjoyed reading about your recent adventures. The cuke salads are delicious and wonderfully refreshing and we have made ones with sour cream, onions, etc. The lemon juice one is way easier, less calories, and so refreshing. Heard of refrigerator cukes and have a recipe, but never tried them ourselves...maybe we should with our excess this season!
